- Arabica coffee
- A flavorful variety of coffee that grows at higher altitudes. The Latin name is Coffea arabica.
- Bali
- An island and region that produces Arabica coffee
- Body
- The feeling that coffee gives on the tongue
- Celebes coffee
- Celebes is the former name for Sulawesi. It is a trade name for Arabica coffee from this area.
- City roast
- A roast level just after the first crack is complete
- Cupping coffee
- Procedure for tasting coffee to determine its quality and flovors
- Finish
- The aftertaste of the coffee
- First crack
- When the first cracks appear in roasting coffee beans, due to carbon dioxide leaving the water in the beans
- Flores
- An Arabica producing island in the Region of East Nusa Tengarra
- Full City roast
- A roast level just before the second crack occurs
- Giling Basah
- Removing the hull when the coffee is in a semi-wet state, at about 30% to 35% moisture
- Indonesian coffee
- Indonesia is the 4th largest coffee producer in the world, with exports of 300,000 tons per year
- Java
- An island that includes the Arabica coffee producing Region of East Java
- Kalossi coffee
- An Arabica coffee producing area in Sulawesi
- Lintong coffee
- An Arabica coffee producing area in Sumatra
- Lixisols
- Weathered soils rich in Iron. Yellow-red Podzolic soil is one type
- Luwak
- The Bahasa name for the Palm Civet. Also the nickname for coffee hullers.
- Mandheling coffee
- A trade name for Arabica coffee grown in Sumatra
- Papua
- The common name given to the Indonesian half of the island of New Guinea. Composed of the Regions of West Papua and Papua. A new producer of Arabica coffee.
- Roasting
- Converting green coffee to roasted coffee in a coffee roaster
- Second crack
- When a second set of cracks appear, due fractures in the cellulose of the beans
- Semi dry
- Synonym for Giling Basah
- Semi washed
- Synonym for Giling Besah
- Semi wet
- Synonym for Giling Basah
- Specialty Coffee
- Arabica coffee which scores 80 or above
